Sandy Matson’s Family Banana Bread Recipe

Sandy's Family Banana Breat

Follow along and make this recipe with Home editor Sandy Matson: 

Sandy's Banana Bread

1/2 cup butter, softened

3/4 cup brown sugar

2 eggs, beaten

1 tsp vanilla

4 ripe bananas, mashed (The key to good banana bread is very ripe fruit!)

1 3/4 cups flour

1/2 tsp salt

1 tsp baking soda

2 tsp baking powder

1/2 tsp cinnamon

1/2 cup walnuts or pecans (My alteration to this recipe is adding dark chocolate mini chips.)

Directions

Preheat oven to 350 degrees.

Grease and lightly flour a  9”x5” loaf pan.

In a bowl, mix butter and brown sugar. Add eggs, vanilla, and mashed bananas. Set aside.

In a separate bowl, sift together, flour, salt, baking soda, baking powder, and cinnamon. Stir in nuts or chips. (optional) 

Combine dry mixture with wet mixture, gently folding them together. (Do not over-mix.)

Place on middle rack in oven and bake for 45-60 minutes, or until knife or toothpick inserted in center comes out clean.

Let sit for 15 minutes before cutting to retain moisture.

For my photo example, I substituted a round muffin pan and a silicone pan that made heart-shaped mini muffins. Just watch your baking time, as these only took about 20 minutes to bake.
