Burrata is no newcomer to fine dining establishments, but it is having a moment. Eateries all over Omaha have added the delicious, creamy appetizer—a mozzarella cheese shell made of cow or buffalo milk, filled with a soft stracciatella cheese and cream created more than a century ago in the Apulia region of southern Italy—to their appetizer menus, with variations on presentation, condiments, accoutrements, and portion size.
