When customers step into The Chocolate Season, they find that the visual buffet of colors and textures can only be matched by the aromatics of freshly brewed coffee and the intoxicating scent of chocolate. Owner Erika Jensen has made chocolate and the art of flavor pairing her life’s passion.
“When you take the time to learn the chemistry behind ganache formulation and pair that with tasting travels across the U.S. and Europe, you create the perfect recipe for unique and exciting product development,” she said.
That is exactly how she created one of her favorite truffles, “Snozzberry.” While enjoying local brews with husband, Bradley, at Kinkaider Brewing Co., she began to ponder if her Snozzberry Sour could actually turn into a chocolate bon bon.
“I tasted bright raspberry notes, but loved that as a sour. It wasn’t heavy or hoppy,” Jensen said. She concocted a caramelized ganache with raspberry puree and raspberry and passionfruit chocolates and then shelled it in yuzu chocolate for extra pucker. She then painted the chocolate to mimic the beer’s branding.
“I love making chocolate fun; every taste should be an experience,” she said.
