Hub Café started with the idea of making the best ingredients in Lincoln come to life and highlighting the local growers and producers behind them in a chef-driven way.
That’s the core of Hub Café, which leans into its farm-to-table aesthetic, from the food served in the dining room to the seasonal, weekly farmers market that is hosted in the patio area adjacent to the park.
“We work hard to develop relationships with small, local farmers and use their products in our menu,” owner and Executive Chef Jake Thiessen said.
“We offer many creative twists on comfort foods,” co-owner Crystal Bock Thiessen added. A good example is the breakfast skillet, which uses local kale, house-made breakfast sausage, and goat feta from Shadowbrook farm. The dish comes with a side of rustic toast from Le Quartier.
The restaurant’s name reflects its location on the confluence of Lincoln’s many bicycle trails as well as its position as a hub for local growers and people who enjoy their food and locally-sourced beers and ciders.
