Chef and owner Pokey Black takes pride in bringing his native Louisiana dishes to Lincoln, introducing people to flavors they may never have eaten before.

“I am from the South, so I know how it tastes,” said Black, a native of Lake Charles, Louisiana. He had been to other local places that were Louisiana-food-themed, but, like eating an aunt’s chicken soup as opposed to Mom’s, the food just wasn’t quite what he was used to eating.

That’s why he opened a Southern cuisine restaurant in the Heartland and why he takes several trips home annually to source quality ingredients and spices—from crawfish to filé powder.

The people of Lincoln responded. Black opened June 30, 2020, and within one month, people lined all the way down the street waiting for food. They still serve crowds of people, and they take serving people to heart, including those in need.

“I feed the homeless once a month or on the holidays,” Black said. “Because of my business, I’m able to do it big.”

Big heart, big flavor—that’s ‘A Taste of Louisiana.’”
